Flatbread Pesto Tomato Pizza

Hope everyone had a wonderful holiday weekend! I am feeling refreshed and motivated to get some work done at home. We are busy unpacking and doing laundry so we needed a quick dinner last night.

We had a flatbread left over from up north, my MIL (mother-in-law) found it at Kroger in the Bakery area. I figured with a few ingredients, we could make a light pizza. 



I brushed the flatbread with olive oil, garlic salt, & parmesan cheese. Then baked @ 400 deg. for 10 minutes. 


A couple weeks ago, I made pesto with the basil from my garden so I spread a thin layer of that, followed by a thin layer of low fat cream cheese to make up the "pizza sauce". I shredded some Unexpected Cheddar from Trader Joe's (best cheese ever, BTW!), sliced tomatoes and cut up some deli ham. 





Bake for 6-8 minutes or until the cheese is melted. I really wanted the top to be crispy so I turned on the broiler on low for a few minutes. Just keep an eye on it since it can burn quickly!



So yummy! The possibilities are endless using this flat bread- just use what you have on hand & make it work. These flatbreads will be added to our weekly grocery shopping list for sure.
